Spinach and Feta Stuffed Chicken Breast Recipe

  • 1/2 cup thawed spinach, squeezed dry

  • 2 cloves garlic minced

  • 3/4 cup Feta Cheese

  • 3 TBSP Low Fat Cream cheese (optional)

  • 3 TBSP Extra Virgin Olive Oil

  • 4 boneless skinless chicken breasts

Preheat oven to 450.

In a bowl mix together spinach, garlic, cream cheese, and feta. Cut a slit in each chicken breast, and stuff with the cheese mixture

In a large pan heat oil.  Cook chicken on each side for 4 minutes or until brown.  Move to greased oven safe dish and cook til internal temp reaches 165.  (check after 25mins)
